A cake is finished when nothing more can be removed. We use three components where others use six, and we let each one be recognisable.

Weights to the gram, temperatures to the degree, resting times respected to the hour. Precision is not fussiness — it is the only way a delicate thing survives.

Season
Fruit is bought at peak and dropped when it passes. A cake that exists all year is a cake made from compromise.

The hand
Every cake is finished by a person, on the day. Small batches are not a marketing choice; they are the limit of what can be done properly.

We buy less, and we pay more for it.
Kōchi yuzu
Cold-pressed peel and juice from Shikoku, for lift and perfume.
Uji matcha
Ceremonial grade, stone-milled, used within days of opening.
Hokkaido cream cheese
Clean, low-acid, the backbone of our cheesecakes.
French cultured butter
82% fat, slowly cultured — depth without heaviness.
Valrhona chocolate
Guanaja 70% and Ivoire, for bitterness and body.
Seasonal fruit
Amaou strawberry, Miyazaki mango, wild blueberry — in season only.
